Continuing on our pasta salad journey this buffalo chicken pasta salad is a great addition to any picnic or holiday lunch. When chilled this pasta salad is quite refreshing and filling with just the rite amount of spice.
Buffalo chicken pasta
1 box cooked pasta
2 large chicken blessed cooked and cubed – you could use canned chicken??
1/2 red onion chopped
3 celery stalks chopped
1 carrot shredded (I use a small cheese grater)
1 cup blue cheese crumbles
1/2 cup ranch dressing
1/2 – 3/4 cup buffalo wing sauce (mild, medium, or hot)
Fresh cracked black pepper to taste.
1. Mix together the ranch, blue cheese and buffalo sauce in a small bowl and set aside. Now is the best time to add spice if needed. Don’t be afraid to taste!
2. Toss the cooked and cooled pasta, chopped chicken, celery, red onion and carrot together in a large bowl.
3. Pour dressing over the pasta and stir until evenly coated. Black Pepper to taste if desired. Reserve in the fridge to cool and allow the flavors to marry. (4 hours is optimal)
4. Divide into bowl and serve.
