Perfectly Boiled Eggs

The kids and I are constantly on the go! Between the park, pool, homeschool for Daisy, and all the traveling we do it can be very difficult to make sure that not only me but the kids are eating healthy and nutritious breakfasts every day… Oh did I mention I am also a full time Registered Nurse! 🙂 Breakfast, in my opinion, is the hardest meal to keep nutritious with all the grab and go pastries and juices that send the little ones blood sugar on a roller coaster often before the sun comes up. What I have begun to do is prepare some quick to go breakfast meals in advance to ensure my kids start their day off rite. One example of a nutricious and ready to go breakfast is: Boiled eggs, grapes, and a banana or avocado. Here is how I boil perfect easy to peel eggs that are ready to go even before we are.
Ingredients and equipment:
Eggs – I use organic brown eggs
Pot
Water
Bowl
8 cups of Ice – give or take

First place your eggs in a single layer on the bottom of a sauce pot and cover with water about 2 inches. Then place the pot on the stove and turn on high. Bring the eggs to a full boil.

Once they have reached a full boil cover, remove from the heat, and let sit for 15 minutes. At this time I also fill a large bowl with 6-8 cups of ice and about the same amount of water. Let this sit while the eggs rest. Set a timer and finish your hair 😉

After the 15 minutes is up remove the eggs from the hot water and place directly into the bowl of ice water. This “shocks” the shells and is key to making your eggs easy to peal. Let this sit for another 15 minutes. Set a timer and finish your makeup.

Remove them from the ice water and set on a towel to dry

Tap the eggs on a hard service and remove the Peel.

Rinse in the now melted ice water to remove any remaining particles of shells. You can store the eggs bak in the carton they came in (if its clean) or in a tupperware.
