Who doesn’t want fresh home made tomato sauce? ย When you first think of the idea it might not seem like a simple or short process. But with a little prep and a little cooking – you can sit back and enjoy a masterpiece of a meal! ย There are many different additions and variations that can be made to this recipe. I will cover the basic sauce here. But feel free to be creative. Send me a message for some suggestions. Here we go….
Ingredients:
10-12 large tomatoes
1/2 cup balsamic vinigar
1/2 cup olive oil
1/4 cup raw sugar
1 tbs salt
1 tbs black pepper
1 tbs oregino
1/2 tbs thyme
1/2 tbs rosemary
1 tbs
10-12 garlic cloves
2 sweet onions
1 pack baby bella mushrooms
Supplies
1 large baking pan
1 blender or food processor
1 large sauce pot
Wooden sauce spoon
Canning supplies if desired (you can always freeze or use the sauce within a few days.)

Start with a Pile of organic fresh tomatoes. I get mine form the local farmers market but you can use tomatoes from anywhere. Slice the tomatoes into quarters along with any peppers, mushrooms and/or onions you would like to include. Arrange the tomatoes in a deep baking dish.

Sprinkle the tomatoes with salt, pepper, olive oil, balsamic vinegar, oregano, sugar,thyme, rosemary and any other seasoning you would like to use. Add 10-12 whole garlic cloves. Bake in the oven at 300* for 3-4 hours.

Once done baking in the oven spoon roasted tomatoes into a blender or food processor. Make sure to include any liquid that is still in the baking dish. This is where a ton of the flavor is! Blend until smooth. Pour into large sauce pot over medium heat and begin to simmer. Since the skins and seeds were not removed from the tomatoes you may want to blend a little longer than usual. I find that leaving the skins and seeds does not change the flavor or the texture of the sauce very much. Plus, it saves you a ton of work!

Add seasoning to taste.

Continue to cook it down over medium heat until sauce reaches its desired consistency. Once finished, you can use sauce immediately, freeze for later, or process in canning jars for storage. ENJOY!!
