Coconut Date Balls
2 cups walnuts
2 cups Medjool dates, pitted (about 20-24 dates) 1⁄2 cup unsweetened shredded coconut
2-3 tablespoons coconut oil
1/2 teaspoon salt
1 teaspoon vanilla extract (optional)
In a food processor, add all ingredients and process until well blended. Roll balls in your hand, Roll in shredded coconut and arrange on a wax paper/parchment paper lined cookie sheet, or place directly in a storage container. Store in the freezer.
